Chocolate Baked Alaska

Ingredients

1 layer of baked chocolate sponge.

3 tbsp Cointreau (or Orange juice).

A 2 egg white quantity basic meringue.

1/2 litre chocolate ice cream.

Method

Place your chocolate sponge on an oven proof dish and sprinkle over the Cointreau (or orange juice). Make the meringue. Using a sharp knife, cut up the ice cream and arrange the pieces, close together, in a domed shape on top of the sponge. Cover completely with meringue, right down to the dish and swirl the outside with the blade of a knife. Place in a hot oven (2200c, 4250f, Gas mark 7) for 4-5 minutes, or until the meringue is golden brown. Serve immediately.

 

The magic of Baked Alaska is that the ice cream will not melt, not even after five minutes of intense heat. Ask your Physics teacher why - that way you can provoke an interesting (?) discussion at the dinner table.
